New Member Spotlight: Fossil Springs Winery

The Paola Chamber of Commerce is proud to welcome Fossil Springs Winery as its newest member.

Named for the fossil-studded limestone the winery sits on, the operation runs on a simple, surprisingly rare rule: every bottle is made from 100% of the fruit on the label — no filler juice, no shortcuts. Founder Mark Allison started with a single semi-dry elderberry release back in December 2017; that one wine has since grown into a full lineup spanning semi-sweet and sweet elderberry, strawberry, blueberry, and blackberry, with elderberry building an especially loyal following thanks to its immune-health reputation. Fossil Springs Winery is also a frequent stop on the Winery Tours by the Miami County Trolley.

And Fossil Springs isn't slowing down. There are strong changes on the horizon for a winery that's already grown from one bottle into a tasty lineup carried in stores across the region.
